WHere is an easy take on a drink from a new cocktail list. It's a large-volume pre-mixed that is bursting full of flavours of a Christmas time, which makes it excellent for your celebration. Any leftover citrus syrup you can use for morning drinks, desserts, or for additional servings of bikinis.
Bikini
Yields 10 servings
For the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Drink (yields 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Method
To prepare the Cordial: Place every components inside a saucepan, heat until it reaches a light boil, mixing so the sugar melts. After that, turn off the stove and leave to cool completely. Pour into a clean bottle, close it keeping it in the refrigerator, it will last for up to one month.
To make Batch Mix: Combine the specified liquid ingredients into one big jug, allow it to infuse for an hour, then strain preferably using cheesecloth, so it's perfectly clear.
For serving: Pour 85ml of your premix into a cocktail shaker filled with ice, gently stirring carefully for a minute to chill. Filter to a cold coupe glass or similar, garnish with some cranberries adding the final touch with a light spray of mandarin oil over the top.
